You and your friends will agree that these easy to whip up sandwich cookies are perfect to be served with a cup of tea.


Gluten free sandwich cookies with buttercream filling

I have made these sandwich cookies as a gift for a friend for the International Day of Friendship. This friend has been very close to me lately and I cherish her very much. We are both foreigners in the UK and both terribly miss our families, who live far. But we thank God that we have each other. We keep finding reasons to laugh, even when life is tough and all we want is to cry, we keep supporting each other in every way possible, we keep praying for hope everything turns out fine. This friend has recently been through something incredibly tough and as much as I have been trying to support her, I know I have been failing at finding the right words to say, and perhaps no words could ever make it easier. But this song called Wait For You by Tom Walker (click the link for YouTube video) has been playing on the radio a lot, and I found these lyrics from the song to be very relevant:

In two short lines Tom Walker has said it all, I guess this is exactly what I want to say to my friend too. And one more thing (although somebody has also already said it before me!): there is nothing that a cup of tea can't fix. And what makes a perfect cup of tea even more perfect? Of course serving some cookies with it! ;)


INGREDIENTS


For the cookies

  • 3/4 cup gluten free flour

  • 3/4 cup ground almonds

  • 1/2 cup sugar

  • 100 g butter (room temperature)

For the buttercream filling

  • 150 g butter (room temperature)

  • 2 eggs

  • 1/2 cup caster sugar

  • 1/2 cups icing sugar

  • 1/2 tsp vanilla extract


METHOD


Cookies

Beat the butter and sugar in a bowl with an electric mixer until creamy, add the flour and ground almonds and mix with your hands until you have a bowl of dough. Cover and place in the fridge for 30 minutes. Preheat the oven to 180 degrees and line the bottom of your baking tray with baking paper. Roll small balls of dough (about 1 inch or 2.5 cm diameter) and press them lightly. When placing the cookies on the baking tray place them well apart. Bake for about 20 minutes. Let the cookies cool before adding the filling.


Buttercream filling

Beat the eggs and the caster sugar in a pan with thick base. Place the mixture on the stove and heat it, continuously stirring. When the mixture has thickened, remove it from the stove and let it cool. Combine butter and icing sugar in a bowl and beat with an electric mixer until creamy, add the eggs and sugar mixture and the 1/2 tsp vanilla extract. Place the mixture in the fridge for 15 minutes.


Final steps to make sandwich cookies

Generously spread the smooth side of the cookies with the cream and sandwich the cookies together. Enjoy!
