Gut friendly vegan Bircher muesli with chia and flax seeds

This is an easy overnight oats and seeds breakfast recipe suitable for vegetarians and vegans.

Planning is often key to making sure your gut remains healthy. Out of all daily meals I'm best at planning breakfast. My mornings are most of the time quite chaotic. I wake up, rush through my routine, and allow only about 15 minutes to have breakfast. This is why it really helps to plan what I'm going to have for breakfast from the night before or even better make breakfast beforehand so that it is ready for me in the morning. Here is where overnight breakfast recipes help with time management in the morning. It only takes 5 minutes to whip up this Bircher muesli, it tastes delicious and provides you with plenty of fibre. The recipe is for 2 portions.
INGREDIENTS
1 apple, grated
6 tbsp oats
1 glass almond milk
1 tsp chia
a handful of flaked almonds
1 tbsp dried cranberries
1 tbsp ground flax seeds
1/2 tsp cinnamon
strawberries for decoration
METHOD
Mix all the ingredients together in a bowl. Refrigerate overnight. Serve in some beautiful glasses and decorate with fresh strawberries.
* NB: Remember that apple is high FODMAP, and while I have been able to reintroduce it, it may not be suitable for you. If this is the case, you can substitute apple for grated carrot or slices of papaya or strawberries.
